Gourmets will have to dig deeper into their pockets if they want to be served snails after an insufficient 2008 harvest, the French canning and preservation industry federation said Friday.
The main reason for the drop is a shortfall from countries in central and southeastern Europe where collecting snails is less and less popular as those countries' economies develop rapidly, a FIAC statement said.
In a bid to motivate potential gatherers in countries which have recently joined the European Union, prices paid for live snails have gone up sharply.
But the industry also faces higher energy, packaging and transport costs and rising salaries.
"All these factors lead to higher resale prices," the federation said.
France last year processed about 14,300 tonnes of gastropods (which also includes slugs, whelks and their like), of which 99 percent

Better yet, the Americans can export all of their slugs to France. Then the Fwenchmen can stuff them into used snail shells and sell them to their countrymen as snails.

While famous around the world as a French dish, Rome has its typical recipe traditionally linked to the festa di San Giovanni or St. John the Baptist’s feast day. The feast day occurs June 24, around the period of the summer solstice. Traditionally, that evening the Romans would fend off spirits and evil demons with exorcisms and magic rituals. Piazza San Giovanni (St. John’s square) would be lit with torches and coloured lamps and the people would bring food. Eating snails with sauce, it was said, would ward off misfortune as the molluscs were considered to represent disharmony.
It tastes good with the right sauce.

... they should work a deal with Rock or someone else who lives in Southern California. ... When I was out there we would pull 'em off the garden plants and stomp 'em by the hundreds on the sidewalks every morning. ... And these were the medium sized brown ones the french love so well.
